Summer Pasta with Chicken
This pasta was a really nice treat after a hard weekend. The walnuts offer a nice unexpected nutty crunch while the creamy dressing coated every cranny of those cute little bowties. In my opinion pasta dishes are easy to make because mentally you are only cooking one thing. Of course you clean ten pots but essentially you use one dish! I love layering the flavors and making the sauce and combining everything in the pan and letting all the aromas take over my house. I like to curl up on the sofa with my bowl of pasta and enjoy my evening. It always has great warmth and you can put so many different items together and come up with the most spectacular meal. This particular pasta is very light and I would recommend it for lunch or even a bridal shower. It has great color and isn’t too rich.
Gorgonzola Chicken Strips
So my husband will pretty much eat anything except rosemary and Gorgonzola cheese, so I decided to cook with Gorgonzola a little differently than I normally do to see if he would notice. He loves chicken strips and when we first started living together for his cook nights he would make frozen chicken strips and tater tots in the toaster oven. I figured bringing this old favorite of his back would be a good way to disguise this cheese. Well it worked! He kept eating and saying “yum this is good.” I quickly said “which part dear” and he replied “the chicken strips, this coating is awesome”. I giggled and confessed that I had tricked him and that he could officially take Gorgonzola off of his list. He proceeded to ask me 15 more times if it really was Gorgonzola and in the end he made up some excuse about everything tasting better fried. Whatever. In my book the score is officially Emily: 1 Michael: 0
Enchilada Soup
I love to eat warm hearty soups in the winter. Texas winters aren’t exactly frigid but this soup always warms me up. It is nice and spicy and has a great texture. This year we were lucky enough to get some serious snow so I was inspired to make this yummy soup.
Can you believe the snow!! We don’t get a white Christmas often so we made sure to take tons of pictures this year. This picture was taken at my parents house on Christmas Eve. We were snowed in!! It was so much fun to have all 13 of us together on Christmas morning!
