Coconut Kumquat Cake
You know you’re in trouble when you start browsing the produce section at Tom Thumb during your lunch break instead of the shoe department at Nordstrom’s. On one of my guilty pleasure lunches, I was lazily eyeing produce when I came across a whole bunch of kumquats. They were so cute all piled up next to the giant oranges, and it dawned on me that I couldn’t recall if I’d ever even eaten one before. How could I have made it this far in life without savoring these cute little wintertime treats? I am a huge citrus fan and yet I’ve been missing out on such an obvious source!
Chocolate Dinner – Dessert
I have to admitt that I was a little nervous to try my hand at making molten cakes. They always look and taste delicious, but they can be quite temperamental. If you under-cook them they will be way too runny in the middle and if you overcook them the centers will not be molten enough. Yeah, I know what you’re thinking. Why couldn’t I have picked some easy dessert to serve at this dinner? Well, we’re just going to have to put our big girl panties and give this one a go!
This recipe is super easy to throw together and since it only takes about 11 minutes to cook, you get dessert ready to eat, fast! I may have cooked mine a minute longer than the suggested time, but I was on the phone chatting with my mom and trying to make the cakes and whipped cream at the same time. They came out fine and would have probably been even more perfect if I had snatched them out of the oven right when the timer went off. You know your oven though, so adjust your time accordingly. Honestly the trickiest part of this dessert was trying to get the cakes out of their little dishes. Although, in hindsight it may have been easier if I had hung up the phone with my mom first. What? I can totallydo two things at once. When removing the cakes make sure to run a thin knife around the edges and place your dessert plate over the top of the baking dish. Use a towel or oven mitt to grab the dish as you flip both the plate and dessert over at the same time. The cake will slide right out of the baking dish and voila…molten cake on a plate! If you don’t want to make the whipped cream, just shake a little powdered sugar over the top and serve immediately. As you can see from the pictures, it was melty goodness!
