Raisin Bread and Bacon Sandwich

I hate breakfast.  If I could eat pizza or chicken or really any lunch/dinner food item for breakfast I would.  Now, I will eat breakfast.  I love a good bagel and omelette’s are my favorite but I prefer to eat them no earlier than 10 am.  Don’t even show me pancakes or waffles or a donut before like 5pm.  I don’t really like fritters at all…  I’m just a really picky breakfast person.  I don’t understand eating dessert for breakfast either.  Yes, I’m saying it.  Donuts are dessert people.  Sweet kolaches are also dessert.  Anything with icing or syrup on it pretty much falls under the dessert category.  You can try to fool yourself all you want but it is the truth.  There, I said it.  Please don’t be mad at me.   Oh yeah – chocolate chip pancakes are also dessert!  So – I created this recipe because to me, if it has an egg in it it is breakfast!  The fact that it is a sandwich makes it all the better.  Natalie will totally disagree with me.  When it comes to breakfast we couldn’t be more different.  Nat hates eggs.   She loves waffles with pecans and syrup all over.  Puke!

Recipe:

2 slices of raisin bread

2 slices of sharp cheddar cheese

2 slices of your favorite bacon

1/4 of a green apple thinly sliced

1 large egg

butter for spreading

garlic powder and black pepper to taste

Cook the two pieces of bacon in a small pan until they are nice and crispy.  Set them aside on a paper towel to help absorb some of the grease.

Whisk the egg in a small bowl to blend the yolk and the white.    Pour the egg into the same pan and cook it like an omelette adding in the garlic powder and pepper before the egg fully cooks.  You should be able to slide the egg out in one sheet with the help of a spatula on to your plate.  If it breaks it is no big deal!

Butter the raisin bread and place one slice butter side down in the same pan.  Layer the bread with one slice of cheese first, the apple slices, bacon, folded egg and second piece of cheese.  Top the sandwich with the second piece of bread butter side up.  When your first slice of bread is golden brown use your spatula to flip the sandwich over and grill the other side.  It should only a few minutes on each side.

  • I do hate eggs, but I’m not a total morning sweets person. I crave protein in the a.m. And my favorite breakfast is a pb&j sandwhich! Although…if you cut out the egg on this sandwhich I would eat it in a heartbeat. YUM!

    I’ve made this sandwich and with homemade raisin bread it is pretty much to die for!! What’s not to love about it – bacon, fresh bread, eggs?! Thank you, God, for making pigs, wheat and chickens. Life is great! :)
