Be Mine, Sweet Cookie
I threw a baby shower for a very good friend of mine last fall. The guest favors consisted of these great cookie mix jars that the other hostess and I put together. We got the idea from Bakerella’s site. I had a couple left over from the party and I’ve been saving them for Valentine’s Day because the M&M’s are pink. I made both batches the other night and they turned out delicious! It was the perfect treat for the snowy weather we are having here in the south. So, if you’re experiencing a snow day or just need a quick Valentine treat, give these tasty cookies a try!
Cowgirl Cookies
1 1/3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup M&M’s
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup sugar
1/3-1/2 cup chopped pecans or walnuts (optional)
1 slightly beaten egg
1/2 cup butter (slightly melted in microwave)
1 teaspoon vanilla
Stir all the dry ingredients together in a large mixing bowl. Add the egg, butter, and vanilla, and use the back of a large spoon to work it all together.
Scoop and roll the cookie dough into 1 1/2 inch balls, place on a parchment covered cookie sheet, and bake for about 12 minutes in a preheated 350 degree oven.
Makes a little over 2 dozen.

Too funny! I made the ones I’d saved from the shower this weekend too. I also thought the pink m&m’s made for the perfect V-day cookie. And they were delish!
Oh my goodness! These came out of the oven and they are gorgeous, store bought looking cookies!! I nervously bit into them thinking they must be too good to be true…nope, they are AMAZING!!! They have beat out my favorite cookie (Neiman Marcus chocolate chip cookie)!!!! Thank youuuuuuu Natalie!! :)
